Quick recipe of the week: Mediterranean egg scramble

Need a quick and easy breakfast (or why not dinner?) Whip these eggs up with a side of avocado and an amazing bread I discovered- Dave's Killer Good Seed Bread- and you have a meal with a dose of heart-healthy mono-unsaturated fats (MUFAs), protein, whole grains, omega-3 fats (has flax seed) and fiber!

Servings: 1

Ingredients:

Organic eggs- 2

California Olive Ranch Extra Virgin Olive Oil- 1/2 tbsp

Baby spinach and arugula, torn up- 1/4 cup

Grape tomatoes- 1/4 cup

Salt & cracked pepper- to taste

Dry rosemary

Dave's Killer Seed Bread- 1 slice

Medium Haas Avocado- 1/2

Method:

1) Heat non-stick egg skillet on low medium heat

2) Add olive oil & heat for a minute

3) Add to a bowl- eggs, greens, tomatoes, salt, pepper and rosemary

4) Pour into skillet and scramble until cooked

Serve with a slice of toasted bread & the avocado.
