Mediterranean Egg Scramble

Servings: 1

Ingredients:

Organic eggs- 2

California Olive Ranch Extra Virgin Olive Oil- 1/2 tbsp

Baby spinach & arugula, torn-up- 1/4 cup

Grape tomatoes- 1/4 cup

Salt & cracked pepper- to taste

Dry rosemary

Dave's Killer Seed Bread- 1 slice

Medium Haas avocado- 1/2

Method: 

1) Heat non-stick egg skillet on low medium heat.

2) Add olive oil & heat for one minute.

3) Add to a bowl- eggs, greens, tomatoes, slat, pepper & rosemary

4) Pout into skillet and scramble until cooked.

Serve with a slice of toasted bread & avocado.
