A quick dinner to prepare with pre-baked Sriracha Tofu I found at Sprouts Market. Similar is available at Whole Foods.

If you are new to tofu, this is a great option because it is much firmer than regular tofu and is reminiscent of chicken.

Of course you may prepare this with grilled chicken as well.

Ingredients/Prep:

(Makes 2 servings)

Sprouts Organic Baked Tofu Sriracha Flavored- 1 package (2 pieces)- cut into small pieces

Broccoli raw chopped- 2.5 cups

Chopped onions- 1/2 cup

Garlic cloves- 2

Jalapeno chopped- 1 (optional)

Ginger grated- 1 tbsp

Extra virgin olive oil- 2 tbsp

Sauce:

Rice wine vinegar- 2 tsp

Organic soy sauce- 1 tbsp

Sriracha Chili Garlic Sauce- 1 tsp

Garnish:

Dry roasted peanuts- 1/4 cup

Cilantro (optional)

Method:

1)Add olive oil to pre-heated non-stick pan or wok, medium heat.

2) Add onions and whole garlic cloves to pan, cook on medium heat until onions slightly cooked.

3)Remove garlic cloves

4)Add broccoli, cover and cook until bright green & still crisp. Uncover.

5)Add grated ginger, tofu pieces (or cooked chicken), jalapeños.

6) For sauce, whisk together ingredients and now add while pan on low heat.

7)Turn off heat and add peanuts and cilantro.
